Bean Sprouts and Julienned Vegetables

Ingredients

  • 16 ounces bean sprouts
  • 1 green pepper, julienned
  • 3 slices cooked ham, julienned
  • 3 stalks green onions, minced
  • 2 eggs
  • 2 tablespoons oil for frying eggs

Dressing

  1. 3 tablespoons lite soy sauce
  2. 1 tablespoon vegetable oil
  3. 1 teaspoon white distilled vinegar
  4. Couple drops Asian sesame oil, optional

Directions

Place beansprouts in a bowl and cover with boiling water for 3–5 minutes. Rinse under cold water, drain and set aside. Prepare green pepper, ham and green onions. Beat eggs and fry as a thin sheet, then cut into narrow strips. Toss all ingredients together with dressing.
